Our honey
Our honeys are produced in Calice al Cornoviglio, in the Val di Vara. We harvest them only when the combs are fully capped, respecting the bees’ natural timing. From that moment on, we handle the honey as gently as possible, using simple, minimally invasive methods all the way to the jar.
We work entirely without heat and on a small, artisanal scale. The honey is extracted by centrifugation and separated from wax particles and any natural impurities, with no heat treatment or refining processes. From extraction to filling and labeling the jars, every step is carried out by hand.
This approach reflects the way we practice beekeeping: respecting the bees, their natural rhythms and the land where we work, without forcing what nature provides. Our beekeeping operation is certified organic, a choice that naturally follows from the way we have always chosen to work.
SPRING WILDFLOWER HONEY
THE FIRST HARVEST OF THE YEAR
The first harvest of the year, when nature bursts into bloom again and the bees return to their intense activity.
Spring Wildflower Honey marks the beginning of each new beekeeping season. It comes from the earliest blooms of fruit trees, willow, dandelion, oak and acacia, which after winter offer the bees an extraordinary variety of nectar.
This botanical richness is what makes every harvest different. Its color ranges from very pale yellow to delicate straw-yellow tones, while floral aromas and subtle fruity notes complement a sweet, delicate and well-balanced flavor.
It is the honey that captures the moment when everything begins again.

FOREST FLOWER HONEY
THE ESSENCE OF SUMMER WOODLANDS
Forest Flower Honey is produced as spring gives way to summer and the spontaneous blooms of the Upper Val di Vara woodlands reach their peak. It reflects a rich, biodiverse environment where chestnut trees, brambles, linden trees, heather and many other wild plants contribute, year after year, to a harvest that is never quite the same.
Its color is naturally darker than our Spring Wildflower Honey, ranging through warm amber tones. The aroma is more intense and complex, with floral and woodland notes. On the palate, it is full and well balanced, with a more restrained sweetness and a pleasantly persistent aromatic finish.
This honey captures the character of the woodland and the summer season, preserving its qualities through small-scale craftsmanship and cold processing.

PRESSED HONEY
A TRADITIONAL METHOD, STILL RELEVANT
Not all honey is extracted in the same way.
Our Pressed Honey was born from the desire to keep alive an old processing technique that risks being lost in the uniformity of modern production. We chose to continue using it because we believe some traditions deserve to be preserved and passed on, especially when they produce honey with such authenticity and character.
Unlike honey extracted by centrifugation, this honey is obtained by pressing the combs. The process is entirely manual, slow and delicate, requiring time, experience and close attention at every stage.
This method preserves a greater amount of pollen and other elements naturally present in the comb, giving the honey a slightly more opaque appearance, a fuller texture and an intense, lingering aromatic profile.
Pressed Honey represents a deliberate choice: rather than pursuing maximum productivity, we continue to make a honey that reflects a different approach to beekeeping — one in which respect for tradition, quality and craftsmanship remain at the heart of every step.

CREAMED HONEY
THE NATURAL CREAMINESS OF HONEY
Creamed Honey is made from honey alone, with no added ingredients. Its smooth, velvety texture comes from a natural crystallization process, gently guided to encourage the formation of extremely fine crystals.
The result is a uniform, creamy and easily spreadable honey that retains all the characteristics of the original honey: its aroma, flavor and natural properties.
Its texture remains stable over time, making it especially enjoyable on bread, toast, yogurt or simply by the spoonful.

OUR HONEY FOLLOWS NATURE’S RHYTHM
Each harvest is unique and available only in limited quantities.
For this reason, some honeys may sell out before the next season.
We prefer to wait for the next flowering rather than force production. It is our way of respecting the bees, the land and the quality of our honey.
