\u201cDo you have acacia honey? What about chestnut honey?\u201d<\/p>

It is a question we are often asked by people discovering our honey for the first time. And understandably so: acacia and chestnut are probably among the best-known varieties of honey and the ones many people are accustomed to looking for.<\/p>

Our answer, however, is no. Le Terre dei Maghi has chosen not to produce monofloral honey.<\/p>

Non \u00e8 una conseguenza del territorio in cui lavoriamo e neppure una decisione recente. \u00c8 una scelta che abbiamo fatto fin dall’inizio, quando il nostro progetto apistico stava ancora prendendo forma, e che nel tempo \u00e8 diventata uno dei principi fondamentali del nostro modo di allevare le api e di intendere il miele.<\/p>

A choice that grew with our project<\/span><\/h2>

Quando abbiamo cominciato ad avvicinarci all’apicoltura abbiamo seguito corsi, studiato e fatto esperienza negli apiari di altri apicoltori. Era necessario imparare, osservare chi aveva pi\u00f9 esperienza di noi, comprendere le tecniche e conoscere un mondo molto pi\u00f9 complesso di quanto possa apparire guardandolo dall’esterno.<\/p>

Proprio mentre approfondivamo le nostre conoscenze, per\u00f2, cominciavamo ad avvertire quella che per noi era una nota stridente. Da una parte imparavamo quanto le api siano importanti per l’ambiente, non soltanto come impollinatrici ma come parte fondamentale degli ecosistemi e preziose testimoni di ci\u00f2 che accade nel territorio in cui vivono. Dall’altra scoprivamo un’apicoltura che, comprensibilmente, deve confrontarsi anche con le esigenze della produzione e con un mercato nel quale il consumatore conosce e richiede soprattutto determinate tipologie di miele.<\/span><\/p>

Acacia, chestnut and other monofloral honeys have distinctive characteristics, and many people seek them out precisely for that reason. We certainly do not believe that they are less valuable or of lower quality. We simply came to understand that this was not the path we wanted to follow.<\/strong><\/p>

Avevamo scelto di avvicinarci all’apicoltura per passione, con l’idea di tutelare le api e conservare un rapporto il pi\u00f9 possibile rispettoso tra l’alveare, l’apicoltore e il territorio. Da qui \u00e8 nata anche la decisione di non cercare di ottenere a tutti i costi un miele con caratteristiche stabilite in partenza, ma di accettare ci\u00f2 che le api e la stagione ci avrebbero dato.<\/span><\/p>

We do not chase the blossoms<\/span><\/h2>

Our apiaries are located in Villagrossa, in the municipality of Calice al Cornoviglio, at an altitude of more than 500 meters, in the landscape where the hills gradually give way to the mountains. Our apiaries are permanent. We do not practice migratory beekeeping and we do not move our hives from one area to another in pursuit of different blooms.<\/span><\/p>

The bees remain in their own territory and, day after day, explore whatever nature makes available to them. This also means accepting that what they find will never be exactly the same, because no two seasons are ever identical.<\/span><\/p>

Una primavera pu\u00f2 arrivare in ritardo oppure essere fredda e molto piovosa; una nevicata improvvisa pu\u00f2 compromettere una fioritura proprio quando sta iniziando; un’estate particolarmente calda e siccitosa pu\u00f2 ridurre drasticamente la disponibilit\u00e0 di nettare. L’anno successivo, nello stesso luogo e con gli stessi alveari, le condizioni possono essere completamente diverse.<\/span><\/p>

All of this affects what flowers, when it flowers and how much nectar the plants are able to produce. As a result, the honey changes too.\nAnd that is precisely why we like to think that each of our harvests tells the story of both a place and a season.<\/strong><\/p>

Why we do not harvest at the end of a particular bloom<\/span><\/h2>

C’\u00e8 per\u00f2 un’altra ragione, per noi ancora pi\u00f9 importante, alla base della scelta di non ricercare produzioni monoflora, e riguarda il momento in cui il miele viene raccolto.<\/span><\/p>

Producing honey strongly characterized by a particular flower requires careful attention to when the honey supers are removed, before subsequent blooms can alter the characteristics of the harvest.<\/span><\/p>

Pensiamo, per esempio, all’acacia. Nel nostro territorio la sua fioritura \u00e8 pi\u00f9 tardiva rispetto alle zone costiere e dura per un periodo relativamente breve. Terminata quella fioritura, altre possono rapidamente prendere il suo posto: il ciliegio, il rovo e le numerose essenze spontanee presenti intorno ai nostri apiari.<\/span><\/p>

If our aim were necessarily to produce acacia honey, we would therefore need to remove the honey supers before nectar from the next blooms became part of the harvest. At that point, however, we would have to ask ourselves a question that matters more to us than the particular variety of honey we are trying to obtain: Is that honey really ready to be harvested?<\/strong><\/p>

And this is where our approach to beekeeping takes a different path.<\/span><\/p>

We wait for the bees to tell us when the honey is ready<\/span><\/h2>

Le api compiono all’interno dell’alveare un lungo lavoro per trasformare il nettare che hanno raccolto in miele e prepararlo alla conservazione. Quando il contenuto di una celletta ha raggiunto le condizioni adatte, la chiudono con un sottile strato di cera: la opercolano.<\/span><\/p>

We have chosen to respect this process and harvest our honey supers when the combs are fully capped.\n\nIt may sound like a small technical detail, but to us it means much more. It means accepting that the timing of the harvest is not determined solely by the flowering calendar or by the type of honey we would like to produce.<\/span><\/p>

We prefer to wait until the bees themselves show us that their work is complete and that the honey is ready to be stored \u2014 and therefore harvested. This means we do not need to collect it prematurely and then resort to artificial dehumidification.<\/span><\/p>

Nel frattempo, naturalmente, pu\u00f2 iniziare un’altra fioritura e le api possono portare nell’alveare un nettare diverso da quello raccolto nei giorni precedenti. Per noi non \u00e8 un problema da correggere: quel nuovo nettare entrer\u00e0 a far parte del raccolto e contribuir\u00e0 a renderlo ci\u00f2 che realmente \u00e8, <\/span>il miele nato in quel luogo durante quella particolare stagione<\/span><\/strong>.<\/span><\/p>

Multifloral does not mean \u201cjust any honey\u201d<\/span><\/h2>

\u00c8 forse questo uno degli aspetti che pi\u00f9 ci interessa raccontare, perch\u00e9 il termine <\/span>millefiori<\/span><\/em> viene ancora percepito qualche volta quasi come una categoria residuale: se un miele non \u00e8 acacia, castagno, tiglio o un’altra monoflora riconoscibile, allora \u00e8 semplicemente un millefiori.<\/span><\/p>

Noi lo vediamo in maniera molto diversa. Nel millefiori troviamo forse il racconto pi\u00f9 completo del territorio nel quale vivono le nostre api, perch\u00e9 dentro un vasetto possono incontrarsi fioriture differenti, con proporzioni che cambiano a seconda del luogo, del momento del raccolto e soprattutto dell’andamento della stagione.<\/span><\/p>

Sono proprio queste combinazioni a determinare colori, profumi, consistenze e sapori che non possono essere perfettamente replicati l’anno successivo. Un miele pu\u00f2 essere pi\u00f9 chiaro o pi\u00f9 scuro, pi\u00f9 delicato oppure avere aromi molto pronunciati; pu\u00f2 cristallizzare con tempi e consistenze differenti. Non cerchiamo di correggere questa diversit\u00e0 per ottenere ogni anno lo stesso risultato: <\/span>la consideriamo parte del valore del miele<\/span><\/strong>.<\/span><\/p>

And this is also why someone tasting one of our honeys for the first time may discover something very different from what they expected.<\/span><\/p>

Accepting that nature does not produce to order<\/span><\/h2>

Naturally, this choice has consequences.\n\nOur production is limited, and not all of our honeys are available at all times or in every season, because some years are generous while others are far less favorable.<\/span><\/p>

Pu\u00f2 accadere che una fioritura sulla quale avevamo riposto delle aspettative venga compromessa da una primavera fredda o piovosa, oppure che caldo e siccit\u00e0 riducano fortemente la disponibilit\u00e0 di nettare durante l’estate. Vivendo e lavorando in un territorio a oltre 500 metri di quota, queste differenze possono essere particolarmente evidenti.<\/span><\/p>

Non possiamo quindi sapere in anticipo quanto miele raccoglieremo n\u00e9 possiamo promettere che un determinato miele sar\u00e0 nuovamente disponibile l’anno successivo nelle stesse quantit\u00e0 e con le stesse caratteristiche.<\/span><\/p>

We have chosen to accept this unpredictability because, for us, beekeeping also means recognizing that nature is not a production process that can be programmed.<\/strong>\n\nWe can observe our colonies, care for them and intervene when their well-being requires it. But we do not want to expect every season to produce the same quantity of honey or exactly the same harvest.<\/p>

Our choices come before quantity<\/span><\/h2>

It would probably be easier to produce what the market already knows and asks for.\n\nBut we have one important freedom: we chose to keep bees first and foremost out of passion, and we do not depend on the quantity of honey we are able to sell. This allows us not to make yield the main criterion when deciding how our hives should be managed.<\/span><\/p>

We can wait until the honey is fully mature even when harvesting earlier might be commercially more convenient.\n\nWe can accept a smaller harvest.\n\nAnd we can accept that a particular honey may sell out and remain unavailable until the bees and the season allow us to produce it again.<\/span><\/p>

We do not consider this a limitation to hide. It is simply the consequence of the way we have chosen to work, placing honey quality and respect for the bees\u2019 natural rhythms ahead of the need for a uniform product that is always available.<\/span><\/p>

When someone comes back<\/span><\/h2>

All’inizio pu\u00f2 esserci un po’ di sorpresa. Chi arriva chiedendo un miele di acacia o di castagno spesso non conosce il nostro modo di lavorare e sta a noi raccontare perch\u00e9 abbiamo fatto determinate scelte e perch\u00e9 i nostri mieli possono essere diversi da quelli che era abituato a comprare.<\/span><\/p>

Poi arriva l’assaggio, ed \u00e8 probabilmente il momento che preferiamo. Capita spesso che chi prova i nostri mieli rimanga sorpreso da un profumo, da una consistenza o da un sapore diverso dal solito e che quella sorpresa si trasformi in apprezzamento.<\/span><\/p>

But the greatest satisfaction comes when that person returns and asks for our honey again. Not so much because it means selling a few more jars, but because in that simple gesture we see something far more important: our work and the choices behind it have been understood and appreciated.<\/strong><\/p>

Forse sarebbe pi\u00f9 semplice produrre ci\u00f2 che il mercato gi\u00e0 conosce e si aspetta. Noi abbiamo scelto un’altra strada: aspettare, osservare e accettare che ogni annata possa essere diversa dalla precedente.<\/span><\/p>

Because in the end, we do not want to decide in advance what kind of honey our bees should produce.\nWe prefer to let the bees, the land and the seasons tell us \u2014 one harvest at a time.<\/strong><\/p>
