Crystallization is one of the natural characteristics of honey

Opening a jar of crystallized honey can come as a surprise. Its texture becomes thicker, its color may appear lighter and its surface less glossy. Many people instinctively wonder whether the honey has gone bad or lost some of its properties.

In reality, quite the opposite is happening.

Crystallization is an entirely natural process that affects most honeys and is one of the characteristics of an authentic product that has not undergone treatments designed to alter its natural composition.

Why does honey crystallize?

Honey is a natural solution made up primarily of two sugars: fructose and glucose.

When the proportion of glucose is higher in relation to fructose, the glucose gradually tends to form small crystals, changing the texture of the honey.

The speed at which this happens depends mainly on the botanical origin of the honey. Some varieties remain liquid for many months, while others begin to crystallize after only a few weeks.

Storage temperature also affects crystallization. Temperatures around 14°C (57°F) encourage crystal formation, while higher or very low temperatures tend to slow the process.

Honey crystallization: an entirely natural process

The presence of crystals does not indicate a defect or a loss of quality.

On the contrary, crystallized honey is often the result of a natural product that has retained its original characteristics.

Honey that is subjected to significant heating in order to keep it permanently liquid can lose some of its aromas and some of the substances naturally present in it. For this reason, crystallization is generally considered a perfectly normal characteristic of authentic honey.

Every honey has its own character

Every variety of honey has different characteristics.

Acacia honey, which is naturally rich in fructose, remains liquid for much longer.

Other honeys, such as many spring wildflower honeys, dandelion honey and rapeseed honey, tend to crystallize much more quickly.

These differences are the result of the natural composition of the nectar collected by the bees and should be regarded as part of honey’s diversity, not as a defect.

How to make crystallized honey liquid again

If you prefer your honey more fluid, the crystals can be gently dissolved.

Simply place the jar in warm water, keeping the temperature below 40°C (104°F), and allow the honey to return slowly to a liquid state.

Temperatures that are too high can affect its aromas and some of its natural properties.

A change that tells a story of nature

Crystallization does not mean that the honey has lost its flavor, aroma or quality.

It is simply an expression of its natural composition.

So when you open a jar and find that the honey has crystallized, there is no reason to be concerned: it is a completely natural transformation, consistent with honey produced with minimal processing and respect for the work of the bees and nature.
